Quick and Easy Italian Pasta 2016-07-23 16:26:01 Serves 8 I love pasta. I especially appreciate imported fine Italian Pasta. Every now and then I find some great pasta at my local deli. When I find it, I buy several different varieties and stock up the pantry. I like having it on hand. It seems that when I am busy or tired from a long day's work, a pasta dinner is easy and satisfying. My husband loves meat, but in this recipeI did not use meat. Instead, I spiced it up some prepared sauce with fresh basil from my garden. I used lots of it and it was delicious. I also use crushed red pepper flakes. They give any sauce a little zing! My children love pasta night. I could easily make pasta once a week, but as I am getting older, I try not to make it so often. Eating pasta late at night only adds to my waistline. Sad but true. With every decade . . . it becomes more of an issue. I walk daily. Most days 3-6 miles. When I turned fifty last year I made a goal to get back into shape. It is a constant effort to stay on top of my fitness goals. I even started running again. It has been a slow start. My body seems to hurt all over from the pounding of the pavement. A friend of mine gave me a great book to inspire me. I will keep you posted as I progress. So for now, pasta is only on the family menu once every couple of weeks. Bon Appetit, Cecelia Write a review Save Recipe Print Total Time 25 min Total Time 25 min Ingredients 2 tablespoons olive oil 1 cup sweet onion, chopped finely 2 garlic cloves, minced 1 cup red wine 1 (12 ounce) can fire roasted tomatoes 1 (25 ounce) pasta sauce 1 tablespoon Italian Seasoning 1/2 teaspoon red pepper flakes) Salt and pepper to taste 1 cup basil, roughly chopped Garnish Parmesan Cheese Instructions In deep pot sauté olive oil, onion, and garlic over medium heat. Cook until the onion is translucent 2-3 minutes. Add wine, tomatoes and pasta sauce. Season with Italian seasoning, red chile flakes, salt and pepper. Simmer uncovered for 15 minutes. This allows the wine to cook off. Add chopped basil and mix well. Meantime cook pasta according to package directions. Save 1/2 cup of pasta water to add to serving dish. Toss pasta and sauce with pasta water. Garnish with fresh basil and parmesan cheese. The secret to great food is fresh herbs. I think that when using fresh herbs, and things like fresh garlic, and red chile flakes, the food tastes better. It gives a simple tomato sauce that extra zing! This basil was picked fresh from my garden. I chopped it up and added it to the sauce right before serving. It is also great uncooked used as a garnish over the pasta. Fresh basil grown in clay pots in my garden. No need for fancy, this is an oversize clay pot. I grow most of my herb in giant pots. It is easy to prevent pesty bugs when they are in pots.
